Herbs stimulate digestion and improve the flow of digestive juices, which make us feel better. They contain numerous nutrients including vitamins, calcium, minerals, enzymes, antioxidants, and phytonutrients that enhance health in ways too numerous to mention. Added to our basic foods, these simple seasonings increase our enjoyment of eating.

Although herbs and spices aren’t calorically dense, since they help us digest and get more nutrition and pleasure out of calorically dense foods, they are worth the effort to add to most dishes.

I use fresh mint, dill, parsley and oregano to most salads. You will be surprised at how much depth and flavor they add.
