This is my go-to cookie recipe and works as a great base for your favorite add-ins. My favorite combo is chocolate chip, cranberry, shredded coconut, coriander seed.

1 egg

1 cup canned lentils

4 tbs butter

1/3 cup palm (coconut) sugar

1 tsp vanilla

1 cup whole wheat flour

1/2 cup other flour (buckwheat, oat, etc)

1 tsp baking soda

1/4 tsp baking powder

1/4 sea salt

Add-ins: pumpkin seeds, sesame seeds, chopped walnuts. chocolate chips, dried cranberries, dried cherries, shredded coconut, coriander seeds, flax seeds.

Beat lentils with emersion wand or blend in blender. Add butter, sugar, beat. Add vanilla. Separately combine flours, baking soda, baking powder and salt. Mix the two. Add your goodies. Bake for 15-20 minutes @ 350 on parchment lined baking sheet. Enjoy.
